The Pod began serving its famed beet burger and breakfast burritos at a local street market earlier this month.
Veganism’s growing popularity has made way for many new restaurants and cafés, and a large crop of all-vegan food trucks have continued to sprout up across the country––the latest being Durango, CO’s The Pod. Kathy Juracka, The Pod’s owner, tells The Durango Herald that she chose to open a food truck in hopes of encouraging healthier eating habits in her community. The truck serves up cruelty-free fare at the La Plata County Fairgrounds Sunday flea market with a menu that includes the much-loved beet burger with flax seeds, oats, and brown rice; tofu scramble breakfast burritos; and veggie curry wraps. “It’s so nice that I’m not the lone vegan anymore,” Juracka tells the news outlet.
