Breakfast is the most important meal of the day, but, for the most part, quick on-the-go brekkies are underwhelming, greasy, and full of all sorts of crap.

Eggstatic food truck offers another option, conscious fare for diners on the run. The truck specializes in a wide range of local, organic, natural, non-GMO, and humanely raised meats in a hurry.

A graduate of Johnson & Wales, truck owner Diana Lichter focuses on internationally influenced breakfast items prepared with conscious ingredients. Organic or non-GMO produce is sourced at local farmers’ markets. Meats are humanely raised with no hormones or steroids. Utensils are naturally derived, biodegradable, and compostable.

Although not everything is low-calorie, the menu focuses on high-quality ingredients with an international flair. Creatively named dishes like “That’s All Yolks,” falafel and fried egg on a torpita — a cross of a tortilla and pita — with hummus, feta, tomatoes, green peppers, and sunflower seeds; “Huevo-over Your Head,” spicy chili on a deep fried tortilla topped with fried egg, spinach, and shaved cheddar cheese topped with crema; and the “Great Eggspectations,” organic cinnamon raisin French toast with maple agave caramelized apples topped with powdered sugar are all just $8. Lichter frequently offers daily specials, as well.

Lichter made the switch to a healthy lifestyle about three years back. A smoker at the time, she was constantly getting sick before she quit.

“Between meeting someone who maintained a healthy diet, school, and educating myself on where our food comes from, I decided I wanted to set an example” she says.

Part of Lichter’s goal is to educate her customers on sustainability and healthy eating.

“My intention is to make the best food possible with the freshest ingredients, made with love,” says Lichter. “It sounds kind of cheesy, but I want people to be happy. A happy tummy is a happy person.”

In addition to the truck, Lichter also offers a catering service which adheres to the same health-conscious eco-friendly principles, Diana’s Catering.

Eggstatic is holding a Grand Opening party this Sunday with live music, merchandise, and food — obviously — from 11 a.m. to 3 p.m.
