MINNEAPOLIS – When Miguel Alvarez met his wife, Ying, while they were working at a local Benihana restaurant, the idea came to them – why not cook hibachi style food and serve it out of a food truck?

And that is how Hibachi Daruma came to salivate the tastebuds of thousands of foodies in the Twin Cities.

“Our food is very popular. People have accepted us,” said Alvarez, who may have been born in Mexico but has spent the last two decades perfecting his Japanese cuisine.

The duo serve the hibachi standard, like chicken, beef and shrimp teriyaki, served with a portion of sizzling fried rice and mixed vegetables.

The couple also own a Sushi Daruma truck. They hope to open an actual restaurant, dedicated to fast hibachi style food, sometime soon.
