Orlando, FL: Coming Soon – A Truck Full of Cheesy Goodness

Catarina Triacca wasn’t too obsessed with checking her online job search account after graduating in May with a bachelor’s degree in food service and restaurant management.

Nope, Triacca has a food truck in her sights.

The 28-year-old joined forces with self-taught “Baking Goddess” Lori Bragg and is planning to debut a new mobile food vendor — The Gastro-Truck — on Central Florida’s streets by next month. The food truck’s headliner will be gourmet grilled cheeses.

“We’re cheese-aholics,” said Triacca, adding that she and Bragg have launched as a catering business to start with as part of their food truck effort.

The duo currently work out of the Central Florida Commissary in Oviedo. All food vendors in Orlando are required to first secure a catering license and then a mobile vendor license and work with a local commissary before getting the OK to hit the road, she said.

Once they launch, though, the truck will boast 26 gourmet grilled cheese sandwiches along with other cheesy greats like macaroni and cheese. To select its signature grilled cheese, the pair plan to hold an event where they will invite guests to taste three different sandwiches and select the best.

And what a difficult predicament that will put folks in, having to decide on the best of cheesy goodness. I hope I’m on the invite list!
