Phoenix: Market on the Grow in North

by The StarPhoenix

While the street food market is limited in the downtown it’s growing in the north industrial area where a number of concession-style food trucks have entered the market.

Sgt. Peppers Mobile Catering and its black-painted lunch trucks became a staple, but shut down years ago, said Brian Vargo, co-owner of startup Lunchbox Foods. A number of lunch trucks have started and failed since, Vargo said.

Vargo runs two trucks stocked with food from the Husky House Restaurant near Credit Union Centre.

The lunch trucks sounds a distinctive horn that resembles “an Italian ambulance,” Vargo said.

The business is targeting the north industrial area where lunch breaks are often too short to hit a restaurant.

“We’re serving a work-a-day need,” he said.
