Mike Stanley serves up homemade sandwiches from his Wildwich food truck. A veteran of the restaurant industry, he’s seen Delaware embrace food trucks and food truck festivals over the past couple years and has hope for the Market East Plaza events.

The twice-monthly fundraiser is held in the church’s parking lot on Holland Glade Road in Rehoboth. Food Truck Friday raises funds for the Food and Love Soup Kitchen and Epworth Skate Park.

It is one of three food trucks currently operated by HMSHost, a provider of food and beverage services for travelers, and the first to open in a travel plaza.

Food trucks have been rolling into increasingly more local events than ever before, including Firefly Music Festival in Dover, the Delaware State Fair, and, most recently, the Wilmington Flower Market, which concluded May 9.

While kitchens on wheels serving freshly prepared food have inundated some U.S. cities for years, they're only starting to show up in force in Sussex. County staff, in a presentation to the County Council, said there's no easy way for an entrepreneur to set up a food truck in most of Sussex County, even if there's an agreement with a commercially zoned parcel owner to park there.

The menu features items diners can eat with their fingers. Consider the “Mac & Cheesteak” – a Philly-style cheesesteak with onions and mac ‘n cheese – and the “Vermonter,” a sandwich with ham, honey mustard, apple coleslaw and sharp white cheddar.
