A golden truck will soon be rolling around Suffolk County, offering healthy meals to children in need.

Food Truck Friday’s monthlong celebration of all things asparagus will come to close when yours truly and other judges weigh in on which food truck asparagus creation is best.

Street Eatz is the newest installment to the Keller ISD lunch offerings, but this mobile food truck has had a long journey to arrive at the four high school campuses.

The Austin couple that runs the Pretty Thai for a White Guy food truck at 409 Jessie St. is getting into the grocery game.

The Food Trust recently partnered with the University of Pennsylvania’s student-led Healthy Food Truck Initiative to help make our city’s food trucks a little healthier. The result? A jointly run organization dubbed the Healthy Food Truck Certification Program.

Menu items include traditional lasagna, vegetarian lasagna, wild boar lasagna and more.

Mr. K’s Mobile Kitchen currently serves salad, one of the few vegetarian options available through all of the food trucks.

“I beat out, you know, bacon and chorizo and cheese sauce and macaroni and cheese to win - and i.e. all of those things. But it felt really inspiring. It was like a victory for the underdog - you know, the healthy food, the potato soup. It felt really…kind of victorious on another level. You know it wasn’t about the actual recipe, but more of a deeper meaning.”
