I love the food truck concept: well-made food gets placed into a moving target whose whereabouts are broadcast across social networks and socialized among the hungry masses.

Under current law, food trucks can only sell their customers pre-packaged food, but a proposed ordinance, sponsored by Ald. Scott Waguespack of the 32nd Ward, seeks to allow vendors to prepare their product inside their trucks, as long as they abide by specific health standards.

While Chicago's City Council debates whether or not to allow mobile trucks to prepare food on them, a number of entrepreneurs are moving ahead, by cooking in licensed kitchens, then loading up trucks and selling to office workers during the day.

“Are you ready for some Mac?” That was question posed by The Southern’s owner Jim Lasky and Chef Cary Taylor on Facebook today as they launched their new mobile mac and cheese truck. Judging by the turnout, the answer was a resounding yes.
