Minneapolis, MN: Mobile cheesecake shop coming to Minneapolis

The founder of Muddy Paws Cheesecake Co. is developing a new mobile retail operation, Camp Cheesecake, which will be based out of a 12-foot-long 1950s-era camper.

Minneapolis/St. Paul Business Journal tells us more:

“It will be a cross between a food truck and an ice cream man,” Muddy Paws founder Tami Cabrera said. “We’re going to have pre-packaged cheesecake kept cold in a refrigerator, and then we’ll just hand them out up and down residential streets.”

Camp Cheesecake is a return to retail for Cabrera. Founded in 1993, the company’s three brick-and-mortar shops are now all closed, but the company has a 2,000-square-foot bakery with a small take-out window in front. Muddy Paws does brisk trade during wedding season and once catered for the Emmy Awards.

If all goes according to plan, the camper will hit the road between June 15 and June 30. Cabrera hopes to build the concept into a franchise if the first prototype camper is successful.
