Question: What is your story?

Answer:MozzaPi is a mobile, wood-fired pizza oven that specializes in artisan breads and pizzas. Entrepreneur Tom Edwards has run MozzaPi since 2011 and plans to have a brick-and-mortar location open later this year in Anchorage. We currently focus on catering private events and the occasional farmer’s market. We focus on only the highest quality ingredients, which are sourced as much as possible from local farms. We want to provide our customers with food that is not only delicious, but also healthy and nutritious.

Q: What food do you serve?

A: We serve artisan pizzas and baked goods, which include items made with our stone milled flour, packaged under the name Louismill Apart from the truck, we also offer artisan bread making classes in Louisville.

Q: How do people find you?

A: We use Twitter, Facebook, Instagram, Google+, Pinterest and our blog to communicate with our customers.

Q: What are the biggest rewards of serving food from a truck?

A: I think the biggest reward is making a difference in someone’s event or special occasion. We love to be the thing that takes someone’s wedding or party to the next level. We create something that they feel is memorable and unique.

Q: What’s your beef?

A: Globalization and the rising trend of lacking respect for ingredients.

Q: Which food truck inspires you?

A: We are a big fan of Wiltshire and their catering business. They put a focus on quality ingredients and products.

Q: How can Louisville grow its food truck culture?

A: Social media is a huge help to our business. We use it to share the story of our products and educate consumers regarding our artisan breads and pizzas. Food trucks need a dedicated location in downtown Louisville where each can consistently sell 100 units a day and earn a livable wage.

Q: What is your mission?

A: The mission of MozzaPi is to create food and experiences that bring joy to someone’s day. We seek to create an environment of respect, appreciation, abundance and gratitude. This means constantly ensuring that our pizzas, baked items, stone milled flour, and educational experiences are always memorable, unique and experiential.
