The haters said it would never work, but Cynthia Kallie’s Meatloaf Bakery has defied the odds (and even inspired a trend), serving meatloaf in the shape of cupcakes to Lincoln Park since December, 2008. Now she’s bringing her savory treats to the Loop with the launch of Meatloaf-A-Go-Go, a food truck that plans to hit the streets in the next week or two.
“It’s been in the cooker for quite some time,” explains Samantha Goardon, the Meatloaf Bakery’s general manager. While the final menu for truck is not 100-percent confirmed, it will include customer favorites, such as the Mother Loaf (ground beef, pork and veal topped with mashed Yukon potatoes—a meatloaf cupcake so famous it’s featured on tomorrow’s episode of the Food Network show Sugar High) and the Loaf-A-Roma (ground beef and Italian sausage with fresh mozzarella topped with a swirl of angel-hair pasta tossed in marinara sauce). The meatloaf cupcakes can be accompanied by sides like “MACnificent pasta” (four-cheese macaroni-and-cheese topped with cheddar, parsley and panko crumbs) or salad, and the truck will also hawk sweets like its signature cookie and whoopie pies (devil’s food cakes with cream-cheese buttercream frosting).
