The restaurant group behind Houston’s The Union Kitchen and Paul’s Kitchen will introduce a cajun-inspired food truck this summer.
According to CultureMap, Gr8 Plate Hospitality will launch The Rolling Kitchen in July with Mike McElroy, sous chef of Paul’s Kitchen, at the helm.
A debut date and schedule for the truck has not yet been decided, but McElroy told CultureMap that he would like to take the truck to Sassafras bar in the Oak Forrest neighborhood several nights a week.
McElroy, who has restaurant experience in New Orleans and Houston, will create the menu for The Rolling Kitchen. CultureMap reported that it is expected to include dishes like stuffed boudain balls and shrimp etoufee over French fries.
Earlier this month, it was reported that The Union Kitchen will open its fourth location in the Houston area. The new location will serve as the the flagship restaurant for Ella Plaza.
The more upscale Paul’s Kitchen opened in Upper Kirby last fall.
Each of these Gr8 Plate restaurants uses locally sourced ingredients to make dishes from scratch. The Rolling Kitchen plans to follow suit.
With the addition of The Rolling Kitchen, Gr8 Plate will tap into Houston’s food truck market, which has seen significant growth in recent years. Several Houston food trucks have been recognized among the best in the nation, and Houston has also seen the addition of its first few food truck parks in just the past two years.
