Eduardo Bruno, the former cxecutive chef at Morton’s on Brickell, planned on owning his own restaurant with his family when the economy hit. “I was working on my own concept for a long time, but I couldn’t get the funding”, he told Short Order.

Driving his car one day, Bruno saw a yellow food truck parked on the side of the road with a “for sale” sign on it and knew he found a way to start his soup and tapas empire. Bruno, along with wife Lisa and son Nicky, debuts Papa’s Tapas tonight.

Everything is homemade, down to the tri-colored corn chips served with fresh ceviche of the day (tonight is tilapia with mandarin and ginger for $6). Five different empanadas will be offered, as well as satay skewers in beef, chicken or shrimp ($6-8 for three skewers and Caribbean slaw or crispy frazzled onions).

Papa’s Tapas will also feature a soup of the day, short rib tacos and desserts (the flan de queso is his mother’s recipe).

The truck is part of the Bruno family’s big picture. Bruno plans to establish the truck, then open Papa’s Soups, a fast casual restaurant somewhere in Miami. World domination comes with the mass distribution of his products in supermarkets, sometime in the future.

Joining Papa’s Tapas at Midway Ford from 5:30 to 10 p.m. tonight are Chef on 4 Wheels, Chef on Wheels, Daddy’s Grill, The Flying Saucer, GastroPod, Latin Burger, Muscle Truck and Sno-Caps 8155 West Flagler Street, Miami
