Wichita State University’s new food truck plaza is almost ready to open. Its first day in operation will be Monday, June 20, organizers said.
The park is set up on the edge of the new Innovation Campus development, at Wheatshocker Drive and Perimeter Road, across the street from the National Institute for Aviation Research. It will be reminiscent of the ICT Pop-Up Urban Park downtown and will have four vendor stalls where food trucks can easily set up. It’ll also have new lighting, sidewalks and seating areas, and it will be adjacent to a pond that’s planned for the Innovation Campus.
The trucks have agreed to try to fill the park at lunch every weekday. A schedule of who will be there will appear at www.wichita.edu/FoodTruckPlaza.Trucks will be at the park from 11 a.m. to 1 p.m. on June 20. The opening day lineup will be Garden of Eatin’, Kona Ice,Noble House Hawaiian Plate Lunch and U Hungry. Occasionally, trucks will be there during dinner hours and for afternoon “coffee breaks.”
The food truckers are excited about the new park, they’ve said, because they’ve previously never been able to set up near WSU. A vending contract prohibits other food businesses from setting up on campus, but this spot isn’t covered by the contract, and the trucks will be close to a large, hungry population every day.
Summer might be a good time to visit, too. No permit is required to park in lots with green or green-and-yellow striped signage.
