Question: What is your story?
Answer: My name is Ramiro Gandara and I am the owner of Ramiro’s Cantina. I opened the food truck about two years ago. I opened my first restaurant in 1997 and have been passionate about the food business ever since. We specialize in Mexican food that is authentic and rich in flavor. We have some of the freshest, and most perfected food in Louisville. We are very accommodating, not to mention we are a high-volume truck. We can serve four people in one minute!
Q: What food do you serve?
A: We serve a large variety of food, everything from vegetarian options to chicken quesadillas to steak tacos. Our most popular item is probably the chicken taco. It has perfectly seasoned chicken with your choice of toppings that include fresh tomatoes, lettuce, onions, finely chopped cilantro, jalapenos and cheeses served in a soft corntortilla, unless requested otherwise.
Q: How do people find you?
A: Social media is our best form of communication. Check our Facebook daily for specials! Social media has really helped advance our menu specialize it to the customers’ likings based on reviews on Yelp and UrbanSpoon.
Q: What are the biggest rewards of serving food from a truck?
A: The customers are the best! There are some people I see every time we are out, no matter the locations. And the fact that all our food comes from local companies. Itsgreat knowing we are contributing to our home community.
Q: What’s your beef?
A: Bad weather always sucks. And that I have to pick just one location, and I can’t be everywhere at the same time.
Q: Which food truck inspires you?
A: Boss Hog’s BBQ — they have the best ribs in town!
Q: How can Louisville grow its food truck culture?
A: It would be nice if the city permits were a little more flexible and the metros areas where we can serve would be more extended.
Q: What is your mission?
A: I have been in the food business almost 20 years and I enjoy everyday getting up and going to work. Not every one can say that! In my off time, my wife Christine and I love trying new local restaurants. We are total food junkies! I have a lot of fun being able to roam around the city getting to introduce Latin food to the Louisville community.
