New Bern, NC: Boyd, Fong team up for catering, food truck

It turns out the kitchen is big enough for two of the area’s best known chefs.

James “Smoke” Boyd, owner of The Flame Catering and Banquet Center, has announced the appointment of Gerry Fong to The Flame’s culinary team.

Fong is a familiar face in New Bern. He formerly was the chef at Persimmons in New Bern and earned fame as the winner on an episode of Food Network’s competition show “Cutthroat Kitchen.”

Fong says he “quietly” joined Boyd’s operation in March after five years at Persimmons.

“It was time for a change,” he said. “I’ve stepped into a new realm of food hospitality. It’s an incredible learning experience. I get to influence the food that’s going out.”

Boyd, an experienced caterer who has operated The Flame for more than 15 years, said the addition of Fong gives his operation more versatility.

“It’s been a blast,” he said. “He totally enhances what we do at The Flame. We’re super-excited, we really are.”
