Sweet sauce brushed on skewered pork meat grilling on hot coals. This will be the fare to be offered by barbecue and street food stand Hoy Pinoy at the Perth stop of the Night Noodle Market in Australia.
Regina Meehan told Sydney Morning Herald that she and her husband James started the business to “promote the amazing flavours and experiences of Filipino food” and as a tribute to her family’s roots in the Philippines.
She said they’ve had a hugely positive reaction while traveling with the Night Noodle Market for the last 18 months, and have over 20,000 barbecue pork belly skewers prepared for Perth.
James told Good Food in February that they also served inihaw na manok with soy glaze, inihaw na baboy with a banana ketchup glaze, lechon cebu, and lechon kawali.
He told Racing that they wanted to “bring that authentic feeling of Filipino food and culture to Australia” by grilling food in front of customers like street vendors do in the Philippines.
Hoy Pinoy will start grilling at the Night Noodle Market on March 18 to 29 in the Perth Cultural Center
