San Diego, CA: Green Truck Gets New Chef, Plans Pop-Up’s

David Holtze, the guy behind Green Truck — the vegetable oil and biodiesel-powered food truck serving an organic, locally sourced (Suzie’s Farm, Catalina Offshore, Sadie Rose Baking Co.) eats — has a new chef behind the wheel.

Farm-to-table food aficionados will remember Marguerite Grifka, who spent over three years as the head chef at Starlite before moving on in 2011. She joined Green Truck just this month, and Holtze says she’ll be developing new monthly menus going forward; one of her newest dishes is a white miso ginger soup with mushrooms and rice noodles.

The truck, which is celebrating its second anniversary in March, has been racking up media mentions (Oprah, CBS’ The Doctors). Holtze told Eater that he feels that the time is right to open the business to franchising, and iscurrently open to interested parties in Orange County and Santa Barbara.

He’s focusing on Green Truck’s catering business and also shared that he’ll be collaborating with a friend, Chef/DJ Gage on Cocina Club, Gage’s underground supper club, while concurrently planning a series of pop-up dinners for the truck.
