A trio of street food-slinging siblings have found a permanent spot for their mobile culinary craft. –
The online fundraising campaign, which closes Tuesday morning, has far surpassed the crew’s original goal of $28,000. Thanks to the financial support, Mei Mei will likely open at 506 Parks Drive by August.
“It’s been in the back of our minds since the very beginning,” said Margaret “Mei” Li, who opened the truck in 2012 along with her brother, Andy, and her sister Irene. “The food truck was a great test model for us to try out different dishes. We’re definitely going to keep it running, but we’re realizing after big snow storms that it’s important to have a location that can function through the winter.”
The truck, which is open year round, bounces around the city serving roughly 250 customers during the lunch rush. The street kitchen has spiked in popularity over the last year, but Li said her family is particularly delighted about the new venture.
“Our parents are both doctors, so when we all decided to go into food trucking, they were like, ‘What?’ But now they’re really happy for us,” said Li.
The 1,300-square-foot eatery will feature energy-efficient equipment, solar shades and insulation; recycled floors, walls and counters; and a compost program. The owners are also looking into planting a rooftop garden.
