If you see a big Panda touring around downtown Scottsdale, you’re not going crazy, and you’re not looking at another extension of the Panda Express Chinese restaurant chain.
Instead, the new Hao Bao Chinese Food Truck has put egg rolls on wheels, along with handmade dumplings and noodle soup, and is parking around Scottsdale in spots such as the Thursday night Miller Market in the Charles Miller Square, on First Street and Goldwater Boulevard.

The idea comes from Jake Lau, who quit his job as a corporate tax consultant to get behind the stove and the wheel. One translation of Hao Bao, he said, is “great buns.” Thus, his mascot panda has a head shaped somewhat like a bun, or a dumpling.
