The general contractor at the Costco site has snagged one of the city’s food trucks to serve construction workers.
Bite Me Mobile Bistro will serve breakfast and lunch weekdays at the site along Grange Avenue south of 41st Street, owner Jess Saestrom said. She expects to be there through October.
The project manager for Washington-based Ferguson Construction, which builds a lot of stores for Costco Wholesale Corp., told Saestrom he was surprised that the city didn’t have more food trucks. At a Costco site last year in Fargo, he had several food trucks trying to get the job. In Sioux Falls, he had to search online, and that’s how he found Bite Me.
Saestrom started Bite Me Mobile Bistro last July at JazzFest. In addition to special events, she serves lunch on weekdays downtown by Wells Fargo or at businesses around town, such as Cigna in the northeast part of the city.
She said she’ll miss her customers but couldn’t pass up the offer to serve food to more than 200 construction workers.
Bite Me will still be around town on the weekends and sometimes at night at the bars, Saestrom said. She’ll also do special events at Strawbale Winery, JazzFest and downtown.
The Costco contractor is putting in an access road at the work site, and Saestrom expects she’ll be there next week. If not, she’ll tweet and post her whereabouts on Bite Me’s Facebook page.
On Friday, she’s planning to be outside Wells Fargo at Ninth Street and Phillips Avenue.
