Food truck Potter’s Pasties is joining the trend of mobile eateries opening full-time restaurants.
The Pioneer Press reports that owner Alec Duncan is taking over the former Broadway Pizza counter at Joe’s Market on Como Avenue, near the University of Minnesota, with plans to open in March. It’s counter-service only; no seats, but he’ll offer delivery.
The menu will be familiar to anybody who’s visited the food truck (which will also return when it gets warm): Lots of hand pies, with some less-expensive options for the student crowd.
Several food trucks have leveraged their curbside success into brick-and-mortar restaurants. World Street Kitchen has opened on Lyndale Avenue in South Minneapolis, while Foxy Falafel opened in St. Paul and Smack Shack is due to open in the North Loop this month.
