If you’re a food-truck aficionado, or just a pasta lover, you’ve probably heard of Heirloom LA’s lasagna cupcakes. No, they aren’t chocolate cupcakes topped with red sauce and cheese icing, just handy little cupcake-sized mini-lasagnas with things like housemade sausage, burrata, romanesco, roasted corn, mascarpone or wild boar ragu. Chef Matthew Poley, who worked atAngelini Osteria for a spell before launching his own catering and artisanal food company, created these little hand-held pasta dishes a few years ago, and they’re everywhere the Heirloom LA food truck goes, which happened to be outside of Everson Royce last night.
We only had time for a quick bite, and when we stopped to see what was on offer, the plancha-grilled wild salmon with beet greens and couscous, the sea bass and the fresh zucchini fritters with spicy tomato sauce (from a truck!) were already gone. So we opted for a sausage lasagna cupcake and a beautiful salad. We love the fresh pasta, the flavors, the crispy cheesy top. They just never disappoint.
