If you’ve never considered eating tacos for your morning meal, maybe it’s time to change your tune, now that Lucky Taco is in town.
The brand-new food truck, owned by husband-and-wife team David and Erin Emmons, launched Monday in Bushnell Park. David, a Texas native, and Erin, who’s from Tolland, met while working together in Austin restaurants. They returned to Connecticut two years ago.
“We’ve both worked in restaurants for the better part of both of our lives. We decided we wanted to start our own venture,” Erin Emmons said. “We thought a taco truck would catch on well here, bring a little Texas flavor to the Northeast.”
Lucky Taco plans to park on Elm Street starting at 8 a.m. on weekdays. On the menu: “build-your-own” tacos and quesadillas with breakfast-ready fillings like eggs, chorizo, bacon, potatoes, peppers and cheese, on your choice of corn or flour tortillas.
When lunch rolls around, the menu switches over to specialty Tex-Mex tacos like pork carnitas with creamy poblano slaw; beef tinga stewed with potatoes, carrots, vegetables and spices; and shredded, stewed chicken. Vegetarian options include marinated portobello mushrooms with red peppers and red onions. Quesadillas are also available, like a recent special of spinach, mushroom, smoked ham and cheese.
Prices vary from $4 for two breakfast egg tacos (with a choice of two fillings, 50 cents for each extra item), $3 per specialty lunch taco and $6 for quesadillas with two fillings. Lunch hour ends around 2 p.m., or later if crowds are heavy, Emmons said.
“This is our first week and we’ve been having a blast,” she said. “Bushnell Park is like a party at lunchtime. It’s so much fun.”
Future menu items include soups and “Blow Your Mind Fridays” specials, which will start next week.
“Everyone’s been responding really well. We’ve gotten some great responses on Facebook and Twitter,” Emmons said. “People will come back for seconds, people have been coming back every day…we’re really loving Hartford.”
